Pune: Come, experience the journey of southern spices on your platter with authentic Malabari, Chettinad, Manglorean and Coastal Andhra cuisines cooked in fresh ground masalas at city’s Hotel JW Marriott, Senapati Bapat Road, Pune. ‘Spice Routes of India’ a unique festival featuring the coastal cuisines will be hosted from 13th -30th August at the famous restaurants of Hotel JW Marriott’s Spice Kitchen and Shakahari.
Influenced by various cultures the Malabari cuisines will be high spot at the festival. Tempting Kallummakkaya curry, Erachi puttu, Parottas and varieties of Biriyanis like mutton, chicken, lamb or prawn will be on top of the list. Unnakkaya, Pazham Nirachathu, Muttamala are the snack items for the festival. Desserts like Chattipathiri and Arikadukka will add a cherry on top to the meal course.
On the occasion of announcement of food festival Ajmal Salim, Director F&B said that, “With its immense popularity for complexity of flavours Chettinad table adds fiery base or gravy to the combination of fresh ground spices comprising sun dried meats and salted vegetables, reflecting the dry environment of the region are served with rice will be on menu. Also veg savouries like Idiyappam, Paniyaram, Vellai paniyaram, etc., will also be seen on the menu list”.
Smack your lips to the highlighting Mangalorean cuisine with its handpicked flavours of Coconut and curry leaves, ginger, garlic and chilli known for its distinctive flavours. Fish being coastal belts staple will be served in varieties of Kori Rotti , Bangude Pulimunchi .Udupi the vegetarian meal of Mangalore Beeja-Manoli Upkari, Neer dosa will be served on the veg menu.
Believed to be truly a gourmet’s delight Andhra’s crispy crunch like Happala, Sandige with its special Moghlai serving in Mutton biryani, Veg biryani, Sanna-Dukra Maas, Pork Bafat, Sorpotel and will be on the menu list. Payasam, the sweet dish will complete your meal in true sense. The boldly spicy and aromatic Hyderabadi cuisine is good refreshment from the typical flavours.
